Chicken breast with Chinese cabbage
ingredients: chicken breast, Chinese cabbage, coconut oil, some coconut water (Alpro), yellow curry paste
Bread for Dinner
I am not baking any cookies this Christmas, but I still get to use my cookie cutters. 😀 Todays dinner is wholemeal rye bread with mustard and chicken breast cut into christmas shapes, some carrots and tomato salad.
Pasta Salad
Ingredients: pasta, gherkins, bell peppers (red, green, yellow), tomatoes, carrots, chicken breast, low-fat cream cheese, low-fat plain yogurt, gherkin brine, salt and pepper
Peking Soup
ingredients:
– 2,5l broth
– 500g chicken breast
– champignons
– bamboo shoots
– red pepper
– 4 eggs
– 4 tablespoon soy sauce
– 3 tablespoon white wine vinegar
– 3 teaspoon tomato purée
– 2-3 tablespoon ketchup
– sambal oelek (as much as you like)
1. Boil 2,5l of water and add the broth powder.
2. Add the chicken breast to the broth and let it boil for 15~ minutes.
3. Meanwhile you can prepare the other ingredients, champginons, bamboo shoots, red peppper and eggs.
4. After 15 minutes take out the chicken breast and use 2 forks to shred it in pieces.
5. Add the whisked eggs to the broth and stir it.
6. Add champignons, bamboo shoots, red peppper and the shredded chicken breast.
7. Add soy sauce, white wine vinegar, tomato purée, ketchup and sambal oelek. Be careful with sambal oelek, it’s hot! I’ve added 6 teaspoon step by step and tasted before adding the next.
I’ve made this soup for the first time and I’m loving it! 🙂
