Baking Bread Rolls

sponge ingredients: 10g yeast, 135ml lukewarm water, 90g whole wheat flour, 60g wheat flour (type 405, click here for more information about flour types)
I dissolved the yeast in the water, added the flour and let my kitchen machine knead it. Then I covered the sponge and let it rest for 30 minutes.

After that I added 1,5 tsp of honey, 350g wheat flour (type 550) and mixed it with 150ml of water. While kneading I added 1,5 tsp of salt and 20g softened butter. I let the kitchen machine knead a smooth dough that comes away from the bowl. Then I formed the dough to a ball, covered it with a tea towel and let it rest for 20 minutes.
The dough is enough to make 10 bread rolls. I weighed the dough on my kitchen scales to find out how much each dough piece should weigh. Then I cut dough pieces with a knife and weighed them one by one to get equal pieces. I placed them on a floured surface, covered them and let them rest for 10 minutes.
The next step took me quite some time since I’ve never made bread rolls before. I took a piece of dough and rolled a ball. While rolling the ball I pinched the dough together on the bottom side. I rolled the dough on the board until it was completely smooth from all sides.
I placed the bread rolls on a baking tray and let them rest for another 30-40 minutes. Meanwhile I preheated the oven to 250° C and placed a bowl of water in the oven to develop steam.
Before putting them in the oven I cut them on the up side. After 10 minutes baking I reduced the temperature to 200° C and let them bake for another 8-10 minutes. I put a sheet of baking paper on top of them because they were already kinda brown, I did not want to burn them. 😉

Banana Yogurt for Breakfast

I had some leftover plain yogurt in the fridge and didn’t want to eat it just like that. So I blended a banana and added some sweetener. Decorated the yogurt with some banana pieces and wholegrain oat flakes. Tadaa.. yummy breakfast!

Goulash with Fusilli and Green Beans

Last night I had the great idea of defrosting my freezer. I did not know that there could be SO MUCH ice in there. Well, I found some frozen goulash in the freezer and thought this could be my lunch today. So here it is, goulash with fusilli and green beans. You can find the recipe of the goulash here.

Spaghetti with Tomato Meat Sauce

I did not call the post “Spaghetti Bolognese” because this is not a real bolognese sauce. I just used steak tartare, passata, garlic, salt, pepper, basil and oregano to make the sauce.

Froebel Stars

The left star was made of 12 strips of ribbon, the right star was made of 4 strips of ribbon. I think it took about 1,5 hours to finish the big star. Damn, you need a hell of a lot of patience to make that star. 😉
