Turkey Hen Veggie Rice with “Brunch Curry”

Ingredients for 3 servings: 400g turkey hen, 170g rice (dry), 500g bell peppers (red, green, yellow – I used frozen bell peppers, because it’s so convenient that they’re already cut in stripes), 1 zucchini, 100g Brunch Curry flavor, 1 tsp. sunflower oil

1. Put the rice with 600ml of water in the rice cooker and let it cook until it’s done.
2. Fry the turkey hen with 1 tsp. of sunflower oil in a non-stick frying pan, season with some salt and pepper. Set it aside when it’s done.
3. Add zucchini and bell peppers in the pan with some water. Let it cook until it has the right texture you like.
4. Add “Brunch Curry” to the veggies and stir it.
5. Add the turkey hen and rice.
6. Serve and enjoy. 🙂

Vegetable Egg Muffins

Ingredients: 5 eggs, 1 zucchini (grated), 2 carrots (grated), 1/2 red onion (diced), tomato (diced), small bell pepper (diced), 1/4 tsp of salt, 1/2 tsp of pepper, paprika, chives

Instructions: Preheat the oven to 175° C. Mix all ingredients, grease the muffin baking tray with some oil before filling it. Bake for about 30 minutes.
