Rice Pudding

This is probably not the healthiest of meals but who cares? 😉 It is delicious for sure and the best when you crave something sweet!

I heated up 500 ml of milk (1,5% fat) until it boiled, then added 125g short-grain rice and reduced the heat to low and let it simmer for about 35 minutes while stirring it frequently to prevent the rice from sticking to the bottom of the pot. I added some artificial sweetener when it was done and ate it with cinnamon. 🙂

Baked Apples

This is the first time I made baked apples after I ate them at a friends house. I removed the apple core and stuffed the apples with a mix of banana, some crushed walnuts and cinnamon. I put them in the oven for about 25 minutes at 200° C. Great healthy snack at this time of the year. 🙂

It’s time for soup

Last night I started feeling a lil under the weather. I went to bed and hoped it would go away. Lucky as I am I woke up with a sore throat. This is really perfect timing, I got only one day left at work for this year and I’m getting sick. Oh well, I went to the pharmacy right when it opened and spent a fortune on some spray that numbs the pain and pills that should make the inflammation go away. On my way home I picked up chicken breast to cook some soup. Let’s hope the combination of medicine and soup will help me get better very soon. 🙂

This is my vegetable chicken soup. It is made with broth, chicken breast, peas, carrots, potatoes and cauliflower. To give the broth a lil more taste I blended the potatoes and some of the carrots.

Bread for Dinner

I am not baking any cookies this Christmas, but I still get to use my cookie cutters. 😀 Todays dinner is wholemeal rye bread with mustard and chicken breast cut into christmas shapes, some carrots and tomato salad.

Soy Spaghetti Pasta

I have tried “slim pasta” and thought it was really disgusting. No taste, weird consistency – it could never be a substitute for real pasta. So today I tried soy spaghetti pasta with tofu tomato sauce. This pasta doesn’t really have a taste either, the consistency is strange aswell but I wouldn’t go as far as to call it disgusting. It is edible but I won’t be buying it again. I’ll stick with real pasta in the future.

Dinner

Pan-fried potatoes with scrambled eggs and green beans. Quick and easy to make. Yummy. 😀
