Pumpkin Soup

Ingredients: 1 hokkaido pumpkin (ca. 1kg), 1l broth, 250ml cream (alternative low-fat cream e.g. Rama Cremefine), salt, pepper, nutmeg, parsley

1. Clean the pumpkin, cut it in half and remove the seedy core.
2. Cut the pumpkin in cubes and let it cook in the broth for about 20 minutes until it’s soft.
3. Puree the pumpkin, add cream and spices.
4. Serve with some parsley.
5. Enjoy. 🙂
