Chocolate Blueberry Muffins

Ingredients:
200g blueberries
3 eggs
5g bourbon vanilla flavour (dr. oetker)
120g/150ml sunflower oil
70g plain yogurt (0,1% fat)

210g flour (1050)
85g brown sugar
40g cocoa powder
1/2 tsp salt
1/2 tsp baking soda

3 Storck Riesen (caramel candy), cut in 4 pieces each

Directions:
Mix liquid ingredients in a large bowl. Mix dry ingredients in a smaller bowl. Mix it all together and add a piece of caramel candy to each muffin. Bake muffins at 175°C for 20 minutes.

PS: They may look burned because the blueberries made the dough very dark. They actually taste super delicious. 😉

Fried Rice again..

I am so glad I was recently introduced to curry paste. Gosh, what have I missed out on all those years! 😉 So I made fried rice again with slightly different ingredients than last time.

Ingredients:
sunflower oil, cooked rice, shallots, breakfast ham, frozen peas, frozen bell pepper strips and curry paste

Directions:
Chop shallots finely and dice breakfast ham. Mix curry paste with hot water until it softens. Heat up some oil in a pan and add shallots. Add breakfast ham next and the vegetables after that. Let it cook for a few mins. Add the rice next and curry paste in the end. Once the curry paste has coated all the rice it’s ready to be served. Enjoy! 😀

Chocolate Banana Muffins

While checking out other blogs yesterday I found this recipe and I often like posts that I want to give a try later. Usually I forget about it pretty fast but today I felt like baking. So while being in the supermarket I checked the post again to see which ingredients I needed to buy. 🙂

Ingredients:
2 large, ripe bananas
3 eggs
5g bourbon vanilla flavour (dr. oetker)
120g/150ml sunflower oil
70g greek yogurt (2% fat)
32g/2 tbsp peanut butter

210g flour (1050)
85g brown sugar
25g cocoa powder
1/2 tsp salt
1/2 tsp baking soda

100g dark chocolate chips

Directions:
Mix liquid ingredients in a large bowl. Mix dry ingredients in a smaller bowl. Mix it all together and add chocolate chips. Bake muffins at 175°C for 20 minutes.

Running & Breakfast

I am training for my first half marathon which will be on 4th October. I am super excited already. I ran 15km for the first time today. 🙂

My breakfast consists of 250g greek yogurt (2% fat), a banana, 40g muesli, some cranberries and of course a latte macchiato. 😀
