baking bread

ingredients: sugar powder, honey, rye flour, wheat flour, cooking salt, butter, yeast, sourdough

20g yeast, 10g sugar powder, 2 table spoons water

sponge: 250g wheat flour, 125g rye flour, 500ml water

mix the sponge and let it rest for 30 minutes

Add to the sponge: 250g wheat flour, 125g rye flour, 20g honey, 10g butter, 20g salt and the mix of powder sugar with yeast. then mix it all together and let it rest for 45 minutes. After that, put the dough in a baking dish or form a bread and put it on a baking tray, let it rest another 45 minutes and cover it with a dish towel.
Preheat your oven to 250° Celsius and place a bowl of water in the oven to develop steam, bake the bread for 10 minutes in the lower third of the oven, then lower the temperature to 200° C and bake it for another 50 minutes. The temperature also depends on the oven. I’ve noticed that my bread gets kinda dark already in the first 10 minutes. That’s why I put a sheet of baking paper on top of the breads until they are done.
