Zucchini Omelette… again..

When I succeed in making omelette or other food like pancakes without breaking them somehow I get kinda proud and want to show it. 🙂 That’s why I just had to take a photo of this omelette, it looks so tasty. If you could only smell it. Mmmhh. 😉

Ingredients: 3 eggs, some slices zucchini (courgette), salt and pepper

I am a huuuuuge monkey fan. If you don’t know the monkeys yet it’s about time you check out their blog. 🙂
On the left you see pretty Millie and on the right her adorable boyfriend Monkey.

The dish I made today is only for you Monkey! I really hope you like it and Millie cooks it for you some time.

It is a courgette omelette with some steamed courgette and tomatoes, seasoned with salt and pepper.

This is Scraggles presenting the omelette. He watched me carefully while preparing it and doing everything right. 🙂
Ingredients: 3 eggs, 1 courgette (zucchini), 2 tomatoes, 1 tsp. of sunflower oil, salt and pepper

“Flat Tuna Meatballs”

Flat Tuna Meatballs. Yes! That is the best description I could come up with for this “dish”. They taste really good when they come right out of the oven, but I’ll also give it a try to eat them cold at work tomorrow. I hope they taste good aswell then. I might add some more spices next time. This was some kind of an experiment. 🙂

Ingredients: 2 cans of tuna in water, 1 egg, 70g low-fat cream cheese, 1 tbsp. tomato puree, salt, pepper and paprika

Instructions: Mix all ingredients together in a bowl. Form “flat meatballs” or whatever you prefer. 😉 Fry them either in a pan or bake them in the oven. Since this was an experiment I started out with a preheated oven at 175° C. I let them bake for about 10 minutes until I had no more patience (cause nothing seemed to happen) and increased the heat to 200° C. Then I let them bake for another 15~20 minutes and took them out of the oven. You can see the result above, they look like brown cookies. 🙂

Yogurt Berry Ice

Ingredients: 300g mixed frozen berries (raspberries, blackberries, red & black currants), 250g low-fat plain yogurt

“Hähnchengeschnetzeltes” – Thin Strips of Chicken with Spätzle

Ingredients: 1kg white mushrooms, 400g chicken, 400g spätzle, an onion, 200g low-fat cream cheese, 500ml broth, 3 tsp. of sunflower oil, salt and pepper, parsley

Instructions:
1. Clean and cut mushrooms in slices. Sear them in a pan with 2 tsp. of sunflower oil or put them for 10 minutes in the Tefal ActiFry (also with 2 tsp. of sunflower oil on top of them).
2. Cut the chicken in thin strips and fry them in a pan with 1 tsp. of sunflower oil. Season with salt and pepper.
3. Prepare the spätzle. I bought fresh spätzle which needed to be cooked for 1 minute only in boiling water.
4. Cut the onion in small cubes and add them to the chicken.
5. Add the broth and cream cheese. Stir until it dissolved completely.
6. Add the mushrooms and spätzle. Season with parsley.
7. Serve and enjoy. 🙂
