Salad

Wow it’s been a while since my last post. Here’s an easy and quick salad.

Salad

ingredients: lollo rosso lettuce, red bell pepper, tomato, cucumber, pink lady (apple), sunflower oil, white balsamic vinegar, salt, pepper and chives
note: I used the oil and white balsamic vinegar in a 1 to 2 ratio.

Vegetable Rice

ingredients: 300ml of water, 80g basmati rice, 1 tsp. broth powder, 1 onion, 3 tomatoes, 1 red bell pepper, 75g low-fat créme fraîche (15% fat), parsley, chives

directions:
1. bring 300ml of water to a boil, add basmati rice and broth powder and lower the heat.
2. cut onion into small pieces and sauté for a few minutes. add the onion to the rice when its nearly done.
3. cut tomatoes and bell pepper in pieces, add créme fraîche, parsley and chives.
4. mix the vegetables with the cooked rice.
5. enjoy. 🙂

Coal Fish Fillet & Colorful Potato Salad

Ingredients: 1kg potatoes, 5 tomatoes, 500g gherkins, an onion, a bunch of fresh chives, 300g low fat (0,1%) yogurt, 1 tbsp. vinegar, 3 tbsp. gherkin brine, 2 tsp. mustard, salt and pepper

Instructions: Boil potatoes with their jacket on. Meanwhile cut the chives and cube the the onion, tomatoes and gherkins. When the potatoes are done peel them. Put the yogurt in a bowl and it with tomatoes, gherkins, cubes and chives. Season it with vinegar, gherkin brine, mustard, salt and pepper. Add potatoes by cutting them in slices. Mix it all together and let it rest for 15 minutes. Ready to serve and enjoy! 🙂
