Quinoa Apple Porridge

ingredients: 50g quinoa, ca. 150ml alpro coconut drink (click here for details), apple, some honey and cinnamon

directions:
– rinse quinoa well with hot water in a fine-mesh strainer because the seeds are very tiny
– bring quinoa and coconut drink to a boil and let it simmer for about 15 minutes
– cut the apple in small pieces and add it to the quinoa with some honey and cinnamon
– enjoy!

Creamy Rice Pudding

Ingredients: 250ml low fat milk (0,3% fat), 65g uncooked short-grain rice, sweetener, cinnamon, 250g low fat curd cheese
Instructions: Bring milk to a boil, add rice and let it simmer for about 35 minutes on lowest heat, stirring occasionally. Add curd cheese when the rice is cooked, use sweetener and cinnamon to taste. Enjoy. 😉

Apple Porridge

ingredients: 60g oat flakes, 250ml skimmed milk (0,3% fat), an apple, cinnamon, 1 tsp. honey or a dash sweetener
directions:
1. grate the apple.
2. boil up the milk with the oat flakes.
3. let the porridge simmer for 7 minutes and add the grated apple shortly before it’s done.
4. add honey/sweetener and cinnamon.
5. enjoy! 😀

Low Fat Curd Cheese and what you can do with it..

The taste of low fat curd cheese (Magerquark in german) is kind of sour and that’s probably the reason why lots of people don’t like it. But actually it can be a healthy and filling breakfast. Just add some flavor to it. Here are two examples: strawberries and banana.

Low Fat Curd Cheese with Strawberries

ingredients: 250g low fat curd cheese, some water, a few frozen strawberries, artificial sweetener and/or honey
instructions: mix low fat curd cheese with some water to make it creamy, defrost strawberries and puree them, mix it all together and add some sweetener if you like

Low Fat Curd Cheese with Banana

ingredients: 250g low fat curd cheese, some water, a banana, cinnamon, artificial sweetener
instructions: mix low fat curd cheese with some water to make it creamy, puree the banana, mix it all together and add some sweetener if you like

Rice Pudding

This is probably not the healthiest of meals but who cares? 😉 It is delicious for sure and the best when you crave something sweet!

I heated up 500 ml of milk (1,5% fat) until it boiled, then added 125g short-grain rice and reduced the heat to low and let it simmer for about 35 minutes while stirring it frequently to prevent the rice from sticking to the bottom of the pot. I added some artificial sweetener when it was done and ate it with cinnamon. 🙂

Baked Apples

This is the first time I made baked apples after I ate them at a friends house. I removed the apple core and stuffed the apples with a mix of banana, some crushed walnuts and cinnamon. I put them in the oven for about 25 minutes at 200° C. Great healthy snack at this time of the year. 🙂

Apple Pie

Ingredients: 400g flour, 6 tbsp. sugar, 1,5 tsp. cinnamon (I had no cinnamon, so I used vanilla sugar), 200g cold butter, 4 egg yolk, 8 tbsp. milk, some lemon peel, 1,2kg apples, 1 lemon (juice), 150g brown sugar, 150g raisins, a pinch of nutmeg and a pinch of kibbled clove

1. I’ve mixed flour, sugar, vanilla sugar and butter.
2. Then I mixed the egg yolks with milk and added it to the flour and let my kitchen machine knead a smooth dough.
3. I put the dough in plastic wrap and let it rest for 1 hour in the fridge.
4. Meanwhile I cut half of the apples in small cubes and cooked them with lemon juice, brown sugar and raisins.
5. Then I cut the other half in slices and added them to the hot apples.
6. I got the dough from the fridge and rolled out 2/3 of the dough with a rolling pin. I put some butter in the pie plate before putting the dough in it. Then I stabbed the dough a few times with a fork.
7. I put the apples (that cooled down a bit by now) in the pie plate.
8. I rolled out the other 1/3 of the dough with a rolling pin and covered the pie with it.
9. I baked the apple pie in the preheated oven at 200° C for 40 minutes.
