Tuna “Pasta” Salad

ingredients: 100g pasta made of 100% red, yellow and black lentils, 455g green beans (a large tin), 150g tuna in water (can), dried herb mix (Knorr “Würzige Gartenkräuter”), 10ml sunflower oil, 2 tbsp water

directions:
– cook the pasta for no longer than it says on the packet
– mix dried herbs with oil and water
– put all ingredients in a bowl and add pasta in the end

servings: 2

Egg Muffins

ingredients: 4 eggs, 1/2 red bell pepper, 50g lean smoked ham, salt, pepper, parsley

directions: – mix all ingredients in a bowl
– fill the mixture in a muffin baking tray
– bake for about 15-20 minutes at 180°C

Kritharaki Salad with Ground Beef

ingredients: 500g ground beef, 500g kritharaki (Greek pasta), 3 bell peppers, 1 onion, 40g tomato puree, 40g ketchup, 2 tbsp oregano, 3 packets of dried herbs (Knorr ‘Würzige Gartenkräuter’), 15ml sunflower oil, salt and pepper

directions:
– mix ground beef with salt, pepper, tomato puree, ketchup, oregano, a half chopped onion and fry it in a large pan
– cook kritharaki for about 14 minutes and drain them
– chop the other half of the onion and the bell peppers, mix them with the dried herbs and 15ml of sunflower oil
– when the pasta and ground beef has cooled down mix it with the marinated bell peppers

ingredients: 125g pasta made of 100% red, yellow and black lentils, 530g peas & carrots (a large tin), 150g tuna in water (can), dried herb mix (Knorr “Würzige Gartenkräuter”), 10ml sunflower oil, 2 tbsp water

directions:
– cook the pasta for no longer than it says on the packet
– mix dried herbs with oil and water
– put all ingredients in a bowl and add pasta in the end

servings: 2

Protein Banana Cheesecake

ingredients: 4 eggs, 30g protein powder (I used ESN Designer Whey Protein Vanilla), 15g baking powder, 10ml sunflower oil, banana, 500g low fat curd cheese

directions:
– separate 4 eggs and beat egg whites until whipped
– mix protein powder with baking powder
– mix egg yolks, sunflower oil, banana and curd cheese, add protein/baking powder mix and stir in the beaten egg whites
– bake for about 40-45 minutes at 180° C depending on your oven
